4 bone-in pork chops (about 1-inch thick)

2 large apples, cored and sliced (preferably Granny Smith or Honeycrisp)

1 cup maple syrup (pure, not imitation)

1/2 cup chicken broth

1 teaspoon cinnamon

1 teaspoon nutmeg

1 teaspoon garlic powder

1 tablespoon Dijon mustard

1 tablespoon olive oil

Salt and pepper to taste

Fresh thyme or parsley for garnish (optional)

Prepare the Pork Chops: Season the pork chops generously with salt and pepper on both sides.

    Sear the Chops: In a large skillet, heat the olive oil over medium-high heat. Sear the pork chops for about 3-4 minutes on each side until they are nicely browned. This step adds flavor and color.

      Prepare the Slow Cooker: In the bottom of your slow cooker, mix together the maple syrup, chicken broth, cinnamon, nutmeg, garlic powder, and Dijon mustard until well combined.

        Layer Ingredients: Place the seared pork chops in the slow cooker on top of the liquid mixture. Arrange the sliced apples around and on top of the pork chops.

          Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the pork chops are tender and cooked through.

            Serve: Once cooked, carefully remove the pork chops and apples from the slow cooker. If you'd like a thicker sauce, pour the liquid into a saucepan and simmer for a few minutes until reduced.
