2 lbs beef chuck, cut into 1-inch cubes

1 cup pearl barley

4 cups beef broth

1 cup carrots, diced

1 cup celery, diced

1 cup onion, diced

4 cloves garlic, minced

2 tbsp tomato paste

1 tsp dried thyme

1 tsp dried rosemary

1 bay leaf

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Brown the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper. Add the beef to the skillet in batches, browning all sides for about 5-7 minutes. Once browned, transfer to the slow cooker.

    Sauté Vegetables: In the same skillet, add the diced onion, carrots, and celery. Sauté for about 4-5 minutes, until the vegetables start to soften. Add the minced garlic and cook for another minute until fragrant. Stir in the tomato paste and cook for an additional 2 minutes.

      Combine Ingredients: Transfer the sautéed vegetables to the slow cooker with the beef. Stir in the pearl barley, dried thyme, rosemary, bay leaf, and beef broth. Make sure everything is well combined.

        Cook Low and Slow: Cover the slow cooker and set it to low. Let the stew cook for 8-10 hours, or until the beef is tender and the barley is cooked through.

          Final Touches: About 30 minutes before serving, taste the stew and adjust the seasoning with more salt and pepper as needed. Remove the bay leaf before serving.
