2 pounds boneless, skinless chicken thighs

1 cup BBQ sauce (homemade or store-bought)

1/2 cup apple cider vinegar

1/4 cup honey

2 cloves garlic, minced

1 tablespoon smoked paprika

1 teaspoon onion powder

1 teaspoon ground cumin

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for heat)

12 slider buns

1 cup coleslaw mix

1/4 cup mayonnaise

Salt to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Marinade: In a bowl, combine the BBQ sauce, apple cider vinegar, honey, minced garlic, smoked paprika, onion powder, cumin, black pepper, and cayenne pepper. Whisk until well blended.

    Cook the Chicken: Place the chicken thighs in a slow cooker and pour the marinade over them. Make sure all pieces are well coated.

      Slow Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreddable.

        Shred the Chicken: Once the chicken is done cooking, remove it from the slow cooker and place it on a cutting board. Use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker and stir to coat in the sauce.

          Prepare the Coleslaw: In a bowl, mix the coleslaw mix with mayonnaise and a pinch of salt. Toss until well combined, and set aside.

            Assemble the Sliders: Toast the slider buns lightly if desired. On the bottom half of each bun, pile on a generous amount of the smoky BBQ chicken. Top with a spoonful of coleslaw and then place the top half of the bun.
