1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon paprika

1/2 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper to taste

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

Juice of 1 lime

Fresh cilantro, chopped, for garnish

Flour or corn tortillas, for serving

Instructions
 

Marinate the Shrimp: In a bowl, combine the shrimp with olive oil, chili powder, paprika, cumin, garlic powder, salt, and pepper. Toss until the shrimp are well coated and marinate for about 15 minutes to allow flavors to meld.

    Prepare the Veggies: While the shrimp is marinating, slice the bell peppers and onion. Set aside.

      Heat the Skillet: Preheat a large skillet over medium-high heat. Ensure it’s hot before proceeding to add the shrimp, as this helps to achieve a lovely sear.

        Cook the Shrimp: Once the skillet is hot, add the marinated shrimp to the skillet. Cook for 2-3 minutes on one side until they turn pink, then flip and cook for an additional 1-2 minutes until fully cooked through. Remove and transfer to a plate, leaving behind the juices.

          Sauté the Vegetables: In the same skillet, add the sliced bell peppers and onions. Sauté for about 5 minutes, or until they are tender-crisp and slightly charred. You can scrape up any flavorful bits stuck to the bottom of the pan while cooking.

            Combine & Season: Return the cooked shrimp to the skillet with the vegetables. Squeeze the lime juice over the mixture and toss everything together gently. Adjust seasoning with salt and pepper to taste.

              Serve: Serve the shrimp and vegetable mixture warm on tortillas. Garnish with fresh cilantro and additional lime wedges if desired.
