Skillet Chicken Breasts with Cherry Tomatoes

4 boneless, skinless chicken breasts (about 1.5 lbs)

1 pint cherry tomatoes, halved

4 cloves garlic, minced

1 medium onion, thinly sliced

1/2 cup chicken broth

1/4 cup balsamic vinegar

2 tablespoons olive oil

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon fresh basil, chopped (or 1/2 teaspoon dried basil)

Salt and pepper, to taste

Optional garnish: fresh basil leaves

Instructions
 

Prep the Chicken: Season both sides of the chicken breasts with salt and pepper. Let them sit at room temperature for about 15 minutes.

    Heat the Skillet: In a large skillet, heat the olive oil over medium-high heat. When the oil is shimmering, add the chicken breasts and sear them for 5-7 minutes on each side, until they are golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, reduce the heat to medium and add the sliced onion. Sauté for about 3 minutes until softened, then stir in the minced garlic and cook for another 1 minute, until fragrant.

        Create the Sauce: Add the halved cherry tomatoes to the skillet, along with the thyme, basil, chicken broth, and balsamic vinegar. Stir to combine and let the mixture simmer for about 5 minutes, allowing the tomatoes to soften and the liquid to reduce slightly.

          Combine Chicken and Sauce: Return the chicken breasts to the skillet, spooning some of the sauce over each breast. Reduce the heat to low, cover, and simmer for an additional 5 minutes to allow the flavors to meld.

            Serve: Plate the chicken breasts and ladle the cherry tomato sauce over the top. Garnish with fresh basil leaves, if desired.
