Ingredients

1 lb ground beef

1 can (15 oz) black beans, drained and rinsed

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade blend)

1 cup beef broth (or water)

1 tsp olive oil

Salt and pepper to taste

8 small corn or flour tortillas

Toppings:

Shredded lettuce

Diced tomatoes

Shredded cheese (cheddar, Monterey Jack, or your choice)

Sour cream

Salsa

Avocado or guacamole

Chopped fresh cilantro (optional)

Instructions

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until softened. Stir in the minced garlic and sauté for an additional 30 seconds until fragrant.

Cook the Beef: Add the ground beef to the skillet. Break it apart with a spatula and cook until browned, around 5-7 minutes. Drain excess fat if necessary.

Season the Meat: Sprinkle the taco seasoning over the cooked beef. Stir to combine, adding the beef broth or water to create a flavorful mixture. Bring to a simmer and let it cook for about 5 minutes, allowing the flavors to meld together. Add the drained black beans, mixing them in gently. Season with salt and pepper to taste.

Warm the Tortillas: While the beef and bean mixture simmers, warm the tortillas. You can do this in a dry skillet over medium heat for about 30 seconds on each side or wrap them in foil and heat them in the oven at 350°F (175°C) for 10-15 minutes.

Assemble the Tacos: Prepare a taco bar so everyone can customize their own! Place the beef and black bean mixture in a serving bowl, along with bowls of lettuce, tomatoes, cheese, sour cream, salsa, and guacamole.

Enjoy Your Feast: Allow everyone to fill their tortillas with the mixture and top them with their favorite toppings. Dig in and enjoy your delicious homemade taco night!
