Ingredients

4 salmon fillets (approximately 6 oz each)

3 tablespoons olive oil

3 cloves garlic, minced

1 lemon (zest and juice)

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 medium zucchini, sliced into half-moons

1 red bell pepper, sliced

Fresh parsley, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a small bowl, mix the olive oil, minced garlic, lemon zest, lemon juice, dried oregano, dried thyme, salt, and pepper. Whisk until well combined.

Marinate the Salmon: Place the salmon fillets on a sheet pan lined with parchment paper or aluminum foil. Brush the marinade generously over the fillets, ensuring they are well-coated. Let them marinate while you prepare the vegetables (about 10 minutes).

Prepare the Vegetables: In a large bowl, combine the cherry tomatoes, zucchini, and red bell pepper. Drizzle with a bit of olive oil and season with salt and pepper. Toss until the veggies are well-coated.

Arrange on the Sheet Pan: Arrange the marinated salmon fillets in the center of the sheet pan, and scatter the prepared vegetables around them.

Bake: Place the sheet pan in the preheated oven and bake for about 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.

Garnish: Once done, remove from the oven and sprinkle fresh parsley over the salmon and vegetables for a vibrant touch.

Serve: Plate the salmon and roasted veggies, and drizzle with any remaining pan juices for extra flavor. Enjoy your delicious meal!
