2 boneless, skinless chicken breasts

2 tablespoons olive oil

Juice of 1 large lemon

Zest of 1 lemon

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

4 large whole wheat or spinach tortillas

1 cup fresh mixed greens (spinach, arugula, etc.)

1 medium cucumber, thinly sliced

1/2 cup cherry tomatoes, halved

1/4 cup crumbled feta cheese (optional)

1/4 cup tzatziki sauce or hummus (for spreading)

Instructions
 

Marinate the Chicken: In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper. Add the chicken breasts to the marinade and coat them well. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours for more flavor.

    Grill the Chicken: Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the leftover marinade. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center. Let the chicken rest for 5 minutes before slicing it into thin strips.

      Prepare the Wraps: Warm the tortillas on the grill for about 30 seconds on each side, just until pliable.

        Assemble the Wraps: On each tortilla, spread a layer of tzatziki sauce or hummus. Top with a handful of mixed greens, a few cucumber slices, halved cherry tomatoes, and sliced grilled chicken. If desired, sprinkle with crumbled feta cheese.

          Wrap it Up: Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Secure with a toothpick if necessary.

            Serve: Cut each wrap in half diagonally and serve with extra tzatziki or hummus on the side for dipping.
