2 pounds fresh ripe figs, stemmed and quartered

1 cup granulated sugar

1/4 cup fresh lemon juice

1/4 teaspoon salt

1 teaspoon vanilla extract (optional)

1/2 teaspoon cinnamon (optional)

Instructions
 

Prepare the Figs: Rinse the figs under cool water and pat them dry. Remove the stems and cut them into quarters.

    Combine Ingredients: In a large saucepan, combine the quartered figs, sugar, lemon juice, and salt. Stir well to mix everything together.

      Cook the Mixture: Place the saucepan over medium heat. Cook, stirring frequently, until the sugar dissolves and the mixture comes to a gentle simmer.

        Simmer Until Thickened: Lower the heat to medium-low and let the mixture simmer uncovered for about 30-40 minutes. Stir occasionally to prevent sticking. The jam is done when it thickens and a spoon leaves a trail in the mixture.

          Add Flavorings: If desired, stir in the vanilla extract and cinnamon during the last 5 minutes of cooking for added depth of flavor.

            Test the Jam: To check the jam's consistency, place a spoonful on a cold plate and let it sit for a minute. Run your finger through it - if it holds its shape, it’s ready! If not, continue simmering for a few more minutes.

              Jar the Jam: Once thickened, remove the saucepan from heat and let it cool slightly. Pour the jam into sterilized jars, leaving about 1/4 inch headspace at the top.

                Seal and Store: Wipe the rims of the jars clean and seal with lids. Allow the jam to cool completely at room temperature before refrigerating. Store in the fridge for up to 3 weeks or process in a water bath for longer shelf life.
