1 cup cottage cheese (preferably small curd)

4 large boiled eggs, peeled and chopped

1/4 cup finely chopped red onion

1/4 cup diced celery

2 tablespoons mayonnaise (or Greek yogurt for a lighter option)

1 tablespoon Dijon mustard

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and black pepper, to taste

Optional: 1 tablespoon capers, rinsed and chopped

Optional: lettuce leaves or whole grain bread for serving

Instructions
 

In a large mixing bowl, combine the cottage cheese and the chopped boiled eggs. Gently mix together with a spatula until well combined, but leave some small egg pieces intact for texture.

    Add the finely chopped red onion, diced celery, and fresh dill to the bowl. If using capers, add them at this stage. Stir gently to combine all the ingredients.

      In a separate small bowl, mix together the mayonnaise and Dijon mustard until smooth. Then, fold this mixture into the cottage cheese and egg mixture. Make sure everything is evenly coated.
