Ingredients

1 lb boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil

1 tablespoon lime juice

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

8 small flour tortillas

Optional toppings: fresh cilantro, avocado, sour cream, salsa, or shredded cheese

Instructions

Marinate the Chicken: In a large mixing bowl, combine the sliced chicken, olive oil, lime juice, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix well until the chicken is evenly coated. Let it marinate for at least 15-30 minutes (or up to 2 hours in the fridge for more flavor).

Prepare the Vegetables: While the chicken is marinating, wash and slice the bell peppers and onion. Set aside.

Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the marinated chicken strips in a single layer. Cook for 6-7 minutes, turning occasionally, until the chicken is cooked through and has a nice golden brown color. Remove the chicken from the skillet and set aside.

Cook the Vegetables: In the same skillet, add the sliced bell peppers and onions. Sauté for about 5-7 minutes or until they are tender and slightly caramelized, stirring occasionally.

Combine Everything: Add the cooked chicken back into the skillet with the peppers and onions. Toss everything together and cook for an additional 2-3 minutes to heat through and let the flavors meld.

Serve: Warm the flour tortillas in a dry skillet or microwave. Fill each tortilla with the chicken and vegetable mixture, and let guests add their favorite toppings like fresh cilantro, avocado slices, sour cream, salsa, or shredded cheese.

Enjoy: Serve immediately and relish the fiesta of flavors in every bite!
