1 lb (450g) boneless, skinless chicken thighs, chopped

1 cup long-grain white rice, rinsed

1 medium onion, diced

2 medium carrots, sliced

2 celery stalks, diced

3 cloves garlic, minced

8 cups low-sodium chicken broth

1 teaspoon dried thyme

1 teaspoon dried parsley

1 bay leaf

Salt and pepper, to taste

2 tablespoons olive oil

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened.

    Add the minced garlic and cook for an additional minute until fragrant.

      Increase the heat to medium-high and stir in the chopped chicken thighs. Season with salt, pepper, thyme, and parsley. Cook until the chicken is browned, about 5 minutes.

        Pour in the chicken broth and add the bay leaf. Bring the mixture to a boil, then reduce the heat to low.

          Stir in the rinsed rice and cover the pot. Simmer for 20-25 minutes, or until the rice is tender and chicken is cooked through.

            Remove the bay leaf and squeeze in the fresh lemon juice. Adjust seasoning as needed with salt and pepper.

              Serve hot, garnished with freshly chopped parsley. Enjoy your bowl of warmth!
