Ingredients

4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

Zest of 1 lemon

Juice of 1 lemon

3 cloves garlic, minced

2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)

2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a mixing bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, paprika, salt, and pepper. Mix well until all ingredients are fully incorporated.

Marinate the Chicken: Place the chicken thighs in a large resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is coated well. Seal the bag or cover the dish and marinate for at least 30 minutes (or up to 2 hours in the fridge for more flavor).

Arrange in Baking Dish: After marination, remove the chicken from the marinade and place it in a baking dish, skin-side up. Pour any remaining marinade over the chicken.

Bake: Bake in the preheated oven for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy and golden brown.

Let it Rest: Once cooked, remove the chicken from the oven and let it rest for 5 minutes before serving. This allows the juices to redistribute, ensuring tender and juicy meat.

Garnish and Serve: Sprinkle with fresh parsley before serving for an added pop of color and freshness. Enjoy your zesty baked lemon herb chicken thighs!
