1 lb elbow macaroni

4 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1 cup whole milk

1 cup heavy cream

4 slices thick-cut bacon, diced

1/2 cup unsalted butter (1 stick)

1/2 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for a kick)

1/2 cup breadcrumbs (for topping)

Fresh chives or parsley, for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente, according to package instructions. Drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, add the diced bacon. Cook until crispy and golden brown, about 6-8 minutes. Remove the bacon with a slotted spoon and let it drain on a paper towel. Keep about 1 tablespoon of bacon fat in the skillet for added flavor.

      Prepare the Cheese Sauce: In the same skillet over medium heat, melt the butter in the reserved bacon fat. Once melted, whisk in the flour and cook for about 2 minutes, stirring continuously until it turns light golden and bubbly (this is your roux).

        Add the Dairy: Gradually pour in the milk and heavy cream while whisking continuously to prevent lumps. Keep whisking until the mixture thickens, about 5 minutes.

          Incorporate the Flavor: Once thickened, reduce the heat to low. Stir in the garlic powder, onion powder, smoked paprika, black pepper, and cayenne pepper. Slowly add the shredded cheddar and Gruyère cheese, stirring until fully melted and smooth.
