1 cup canned coconut milk (full fat for creaminess)

1 cup almond milk (or any preferred non-dairy milk)

1/4 cup maple syrup (adjust based on sweetness preference)

1/4 cup cornstarch

2 tablespoons matcha green tea powder (high-quality)

1/2 teaspoon vanilla extract

A pinch of sea salt

Toasted coconut flakes (for garnish)

Fresh berries (for garnish, optional)

Instructions
 

In a medium saucepan, combine the canned coconut milk and almond milk over medium heat. Stir occasionally until the mixture is warm but not boiling.

    In a separate bowl, whisk together the maple syrup, cornstarch, matcha powder, vanilla extract, and sea salt until smooth and well combined.

      Slowly pour the matcha mixture into the warm milk mixture while continuously whisking to avoid lumps. Keep whisking until everything is fully blended.

        Continue to cook the pudding over medium heat, stirring constantly, for about 5-7 minutes, or until the mixture thickens and starts to bubble slightly. You want it to have a silky consistency.

          Once thickened, remove the saucepan from heat and let it cool slightly. Transfer the pudding into individual serving cups or bowls.

            Cover each cup with plastic wrap (pressing the wrap directly onto the surface of the pudding to avoid a skin forming) and refrigerate for at least 2 hours or until fully set.

              Before serving, remove the plastic wrap and garnish with toasted coconut flakes and fresh berries, if desired.
