Shrimp Skewers with Pineapple Salsa

For the Shrimp Skewers:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon fresh cilantro, chopped (optional)

For the Pineapple Salsa:

1 cup fresh pineapple, diced

½ red bell pepper, finely chopped

¼ red onion, finely chopped

1 jalapeño pepper, seeded and minced (adjust for heat preference)

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Instructions
 

Marinate the Shrimp:

    - In a medium bowl, combine olive oil, lime juice, garlic powder, smoked paprika, salt, and black pepper. Mix well.

      - Add the shrimp and toss to coat evenly. Let marinate for at least 20 minutes (up to 1 hour in the refrigerator for more flavor).

        Prepare the Pineapple Salsa:

          - While the shrimp is marinating, prepare the pineapple salsa. In a separate bowl, combine diced pineapple, red bell pepper, red onion, jalapeño, and fresh cilantro.

            - Squeeze the lime juice over the mixture, then season with salt and pepper to taste. Mix gently and set aside to let the flavors meld.

              Preheat the Grill:

                - Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.

                  Skewer the Shrimp:

                    - Thread the marinated shrimp onto the skewers, about 4 to 5 shrimp per skewer. If desired, alternate with pieces of bell pepper or onion for added color and flavor.

                      Grill the Shrimp:

                        - Place the shrimp skewers on the grill and cook for about 2-3 minutes per side, or until the shrimp turn pink and are cooked through. Be careful not to overcook!

                          Serve:

                            - Once cooked, remove the skewers from the grill. Serve hot with a generous topping of pineapple salsa on the side.

                              Garnish (Optional):
