1 cup stone-ground grits

4 cups water or low-sodium chicken broth

1 cup shredded sharp cheddar cheese

1 lb large shrimp, peeled and deveined

4 strips of bacon, chopped

2 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon Cajun seasoning

1/2 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper to taste

1 tablespoon fresh lemon juice

2 green onions, chopped (for garnish)

Chopped fresh parsley (for garnish)

Instructions
 

In a medium saucepan, bring water (or chicken broth) to a boil. Gradually stir in the stone-ground grits, reduce heat to low, and simmer for about 20-25 minutes, stirring occasionally until thickened.

    Once grits are cooked, stir in the shredded cheddar cheese until melted and creamy. Season with salt and pepper to taste. Keep warm.

      In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the skillet.

        Add butter to the skillet with the bacon fat, then sauté the minced garlic until fragrant, about 1 minute.

          Add the shrimp to the skillet and season with smoked paprika, Cajun seasoning, red pepper flakes, salt, and pepper. Cook for about 2-3 minutes per side until shrimp are pink and opaque.

            Stir in lemon juice and the cooked bacon pieces. Mix well to combine.

              To serve, spoon the cheesy grits onto plates and top with the shrimp mixture. Garnish with chopped green onions and fresh parsley.
