Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon cumin

Salt and pepper to taste

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, diced

1/2 red bell pepper, finely chopped

1/4 red onion, finely chopped

1 jalapeño, seeded and diced (optional for spice)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

1/4 cup sour cream or Greek yogurt

1 tablespoon mayonnaise

1 tablespoon lime juice

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt to taste

For Serving:

2 cups cooked quinoa or rice

2 ripe avocados, sliced

Fresh cilantro for garnish

Lime wedges for garnish

Prepare the Shrimp: In a large bowl, combine the shrimp with olive oil, garlic powder, paprika, cumin, salt, pepper, and lime juice. Toss to coat the shrimp evenly and let it marinate for about 15-20 minutes.

    Make the Mango Salsa: In a separate bowl, mix together the diced mango, red bell pepper, red onion, jalapeño (if using), cilantro, lime juice, and salt. Gently toss until combined and set aside to allow the flavors to meld.

      Prepare the Lime-Chili Sauce: In a small bowl, whisk together the sour cream (or Greek yogurt), mayonnaise, lime juice, chili powder, garlic powder, and salt until smooth. Adjust seasoning to taste and set aside.

        Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp in a single layer, cooking for 2-3 minutes on each side, or until they are pink and opaque. Make sure not to overcrowd the pan; you may need to cook in batches.

          Assemble the Bowls: Start with a base of cooked quinoa or rice in each bowl. Top with sliced avocado, cooked shrimp, and a generous spoonful of mango salsa. Drizzle over the lime-chili sauce.
