1 lb Italian sausage (sweet or spicy, your choice)

1 large red bell pepper, sliced

1 large yellow bell pepper, sliced

1 large green bell pepper, sliced

1 large onion, sliced (red or yellow)

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Crusty bread or rice, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Vegetables: In a large bowl, combine the sliced bell peppers, onion, and minced garlic. Drizzle with 2 tablespoons of olive oil and sprinkle with oregano, basil, crushed red pepper flakes, salt, and pepper. Toss until well coated.

      Prepare the Sausage: In the same bowl, add the Italian sausage links (whole). Drizzle the remaining 1 tablespoon of olive oil over them. Toss gently to coat the sausage with the oil and herbs.

        Arrange on Sheet Pan: Spread the sausage and vegetable mixture evenly on a large sheet pan, ensuring everything is in a single layer for even roasting.

          Roasting Time: Place the sheet pan in the preheated oven and roast for 25-30 minutes, or until the sausages are cooked through (internal temperature reaches 160°F/70°C) and the vegetables are tender and caramelized.

            Final Touches: Once done, remove from the oven and let it cool for a couple of minutes. For added flavor, sprinkle fresh parsley over the top.

              Serve: Serve hot with crusty bread or over a bed of rice to soak up the delicious juices.
