Sheet Pan Lemon Herb Tilapia with Veggies

For the Tilapia:

4 (6-ounce) tilapia fillets

2 tablespoons olive oil

Zest and juice of 2 lemons

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

For the Veggies:

2 cups broccoli florets

1 cup cherry tomatoes, halved

1 medium red bell pepper, sliced

1 medium zucchini, sliced

1 teaspoon Italian seasoning

1 tablespoon balsamic vinegar

Salt and pepper, to taste

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, dried oregano, dried thyme, paprika, salt, and pepper.

      Marinate the Tilapia: Place the tilapia fillets in a shallow dish and pour half of the marinade over them. Let them marinate for about 15 minutes while you prepare the vegetables.

        Prepare the Veggies: On a large sheet pan, combine broccoli florets, cherry tomatoes, red bell pepper, and zucchini. Drizzle with balsamic vinegar, olive oil, Italian seasoning, salt, and pepper. Toss until the vegetables are evenly coated.

          Add the Tilapia: Create space on the sheet pan by pushing the veggies to the sides. Place the marinated tilapia fillets in the center of the pan.

            Drizzle Remaining Marinade: Pour any remaining marinade over the fish and vegetables for added flavor.
