Ingredients

4 salmon fillets (about 6 oz each)

1 lb fresh asparagus, trimmed

3 tablespoons olive oil

Zest and juice of 2 lemons

4 cloves garlic, minced

1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

Salt and pepper to taste

Lemon wedges, for garnish

Fresh parsley, chopped, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.

Prepare the Asparagus: Place the trimmed asparagus on one side of the prepared baking sheet. Drizzle 1 tablespoon of olive oil over the asparagus, then sprinkle with salt and pepper. Toss to coat evenly.

Marinate the Salmon: In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lemon zest, lemon juice, minced garlic, dried thyme, salt, and pepper.

Arrange the Salmon: Place the salmon fillets on the other side of the baking sheet. Pour the lemon-garlic mixture over the salmon, ensuring they are well-coated.

Bake: Roast in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender-crisp. If you prefer your salmon a bit more caramelized, you can broil it for the last 2-3 minutes.

Serve: Once cooked, remove from the oven. Let it sit for a couple of minutes, then garnish with fresh parsley and lemon wedges before serving.

Enjoy: Serve immediately, perhaps with a side of quinoa or rice for a complete meal!
