1.5 lbs boneless, skinless chicken breasts, sliced into strips

2 red bell peppers, sliced

2 green bell peppers, sliced

1 large onion, sliced

3 tablespoons olive oil

2 teaspoons chili powder

2 teaspoons cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

8 small flour or corn tortillas

Fresh cilantro, for garnish

Lime wedges, for serving

Optional toppings: avocado, sour cream, shredded cheese, salsa

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or foil for easy cleanup.

    Prepare Ingredients: In a large mixing bowl, combine the sliced chicken, red and green bell peppers, and onion.

      Season the Mixture: Drizzle the olive oil over the chicken and vegetables. Sprinkle with chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss everything together until the chicken and vegetables are evenly coated in the seasoning.

        Arrange on Baking Sheet: Spread the seasoned chicken and vegetables evenly on the prepared baking sheet. Ensure they are in a single layer for even cooking.

          Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender but still slightly crisp. Stir halfway through for even cooking.
