Sesame Hoisin Ground Chicken Lettuce Wraps

1 lb ground chicken

2 tablespoons sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 red bell pepper, finely diced

1 carrot, shredded

1 cup shiitake mushrooms, finely chopped

1/2 cup green onions, chopped (plus extra for garnish)

1/4 cup hoisin sauce

2 tablespoons low-sodium soy sauce

1 tablespoon rice vinegar

1 teaspoon sriracha (optional, for heat)

1 head of butter or iceberg lettuce, leaves separated

2 tablespoons sesame seeds, toasted

Fresh cilantro for garnish

Heat the Oil:

    In a large skillet, heat the sesame oil over medium-high heat.

      Cook the Chicken:

        Add the ground chicken to the skillet. Cook for about 5-7 minutes until browned and cooked through, breaking it apart with a spatula.

          Sauté Aromatics:

            Add the minced garlic and ginger to the skillet. Sauté for 1-2 minutes until fragrant.

              Add Vegetables:

                Stir in the diced red bell pepper, shredded carrot, and chopped shiitake mushrooms. Cook for another 3-4 minutes until the vegetables are tender.

                  Combine Sauce Ingredients:

                    In a small bowl, mix together the hoisin sauce, soy sauce, rice vinegar, and sriracha (if using). Pour the mixture over the chicken and vegetable mixture. Stir well to combine.

                      Finish Cooking:

                        Continue to cook for an additional 2-3 minutes, allowing the flavors to meld together. Stir in the chopped green onions.
