1 lb mixed seafood (shrimp, scallops, and crab meat)

1 medium onion, finely chopped

2 cloves garlic, minced

2 stalks celery, chopped

1 medium carrot, diced

1 cup diced tomatoes (canned or fresh)

4 cups seafood stock (or fish broth)

1 cup heavy cream

1 teaspoon Old Bay seasoning

1/2 teaspoon smoked paprika

1/2 teaspoon fresh thyme (or 1/4 teaspoon dried)

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley for garnish

Lemon wedges for serving

Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion, celery, and carrot. Cook until softened for about 5-7 minutes. Stir in the garlic and cook for an additional minute until fragrant.

    Add Tomatoes and Seasoning: Stir the diced tomatoes into the pot, followed by the Old Bay seasoning, smoked paprika, fresh thyme, salt, and pepper. Let this mixture simmer for about 5 minutes, allowing the flavors to meld together.

      Introduce the Seafood Stock: Pour in the seafood stock and bring the mixture to a gentle simmer. Let it simmer for 15 minutes, allowing the flavors to deepen.

        Blend the Bisque: Using an immersion blender, blend the soup until it's smooth and creamy. Alternatively, you can carefully transfer the soup in batches to a traditional blender, but ensure to let it cool to avoid splatters.

          Add the Seafood: Return the blended mixture to the pot over low heat. Add the mixed seafood into the bisque and simmer gently for about 5-7 minutes, or until the seafood is cooked through and opaque.

            Finish with Cream: Stir in the heavy cream and bring the bisque just to a gentle heat, ensuring not to boil. Taste and adjust seasoning if necessary.
