1 lb boneless, skinless chicken breasts, diced

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 cup bell peppers (red and yellow), diced

1 cup broccoli florets

1 cup cherry tomatoes, halved

1 teaspoon paprika

1 teaspoon Italian seasoning

Salt and pepper, to taste

½ cup shredded mozzarella cheese

Fresh basil or parsley, for garnish (optional)

Instructions
 

Heat the Oil: In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onions and sauté for 2-3 minutes until translucent.

    Cook the Chicken: Add the diced chicken to the skillet. Season with paprika, Italian seasoning, salt, and pepper. Cook for about 6-8 minutes, stirring occasionally, until the chicken is browned and cooked through.

      Add the Garlic & Vegetables: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant. Then, add the bell peppers, broccoli florets, and cherry tomatoes to the skillet. Mix well and let them cook for another 5-7 minutes until the vegetables are tender.

        Melt the Cheese: Once the vegetables are cooked but still crisp, sprinkle the shredded mozzarella cheese over the top. Cover the skillet and let it sit for about 2-3 minutes, allowing the cheese to melt and become gooey.
