Savory Vegetable and Cheese Quesadillas

4 large flour tortillas

1 cup shredded Mexican blend cheese (or your favorite cheese)

1 cup fresh spinach, chopped

1/2 cup bell peppers, diced (any color)

1/2 cup zucchini, grated or diced

1/2 cup mushrooms, sliced

1/2 small onion, finely chopped

2 tablespoons olive oil

1 teaspoon ground cumin

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Sour cream or salsa for serving (optional)

Instructions
 

Prepare the Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onions and sauté for about 2 minutes until they begin to soften.

    Add the Remaining Veggies: Add the diced bell peppers, zucchini, and mushrooms to the skillet. Cook for another 3-4 minutes until the vegetables are tender. Stir in the chopped spinach, cumin, garlic powder, salt, and pepper. Cook for an additional 1-2 minutes until the spinach has wilted. Remove from heat and let cool slightly.

      Assemble the Quesadillas: Lay a tortilla flat on a clean surface. On half of the tortilla, sprinkle a generous amount of cheese, then layer on a portion of the sautéed vegetable mixture. Sprinkle a little more cheese on top of the vegetables, then fold the tortilla over to create a half-moon shape. Repeat with the remaining tortillas.

        Cook the Quesadillas: Heat the remaining tablespoon of olive oil in the skillet over medium heat. Carefully place one or two quesadillas (depending on the size of your skillet) into the skillet. Cook for about 3-4 minutes on each side until the tortillas are golden brown and the cheese is melted.

          Slice and Serve: Remove the quesadillas from the skillet and let them rest for a minute before slicing them into wedges. Garnish with fresh cilantro if desired. Serve warm with sour cream or salsa on the side.
