2 medium sweet potatoes, peeled and diced

1 lb ground turkey

1 small onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 medium zucchini, diced

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

1 cup chicken broth

1/4 cup fresh cilantro, chopped (for garnish)

Optional: sliced avocado and lime wedges for serving

Prep the Ingredients: Start by peeling and dicing the sweet potatoes, chopping the onion, and mincing the garlic. Also, dice the red bell pepper and zucchini.

    Cook the Turkey: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground turkey, seasoning it with salt, pepper, smoked paprika, cumin, and chili powder. Cook until browned and fully cooked, breaking it apart with a wooden spoon, about 5-7 minutes. Remove the turkey from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and minced garlic, sautéing until fragrant, about 2 minutes. Then, add the diced sweet potatoes and bell pepper. Cook, stirring occasionally, for about 5-7 minutes until the sweet potatoes begin to soften.

        Add Zucchini and Broth: Incorporate the diced zucchini into the skillet. Pour in the chicken broth, stir well to combine, and bring the mixture to a simmer. Cover the skillet with a lid and let it cook for an additional 10-15 minutes, or until the sweet potatoes are tender.

          Combine and Heat Through: Once the sweet potatoes are tender, add the cooked turkey back into the skillet. Stir to combine everything thoroughly, allowing it to heat for an additional 2-3 minutes. Taste and adjust the seasoning with more salt and pepper if needed.
