4 ripe peaches, halved and pitted

1 cup fresh mozzarella balls (bocconcini)

1 cup arugula or mixed greens

1/4 cup fresh basil leaves, torn

2 tablespoons balsamic glaze

2 tablespoons extra virgin olive oil

Salt and pepper, to taste

1 tablespoon honey (optional)

1/4 cup toasted pine nuts (optional)

Instructions
 

Preheat the Grill: Heat your grill or grill pan to medium-high heat.

    Prepare the Peaches: Brush the cut sides of the peach halves with a little bit of olive oil to prevent sticking on the grill.

      Grill the Peaches: Place the peach halves cut-side down on the grill. Grill for about 3-4 minutes until grill marks appear and the peaches are slightly softened. Flip and grill the other side for an additional 2-3 minutes. Remove from the grill and let cool slightly.

        Assemble the Salad: In a large bowl, toss the arugula or greens with a drizzle of olive oil, salt, and pepper. Lay the grilled peach halves on top of the greens.

          Add the Cheese and Nuts: Scatter the fresh mozzarella balls over the salad. If using, sprinkle the toasted pine nuts for added crunch.

            Finish with Basil and Glaze: Tear the fresh basil leaves and sprinkle them over the salad. Drizzle the balsamic glaze generously over the entire dish. If you like it sweeter, you can also drizzle the honey on top.
