1 lb ground lamb (or beef)

1 medium onion, finely chopped

2 cloves garlic, minced

2 carrots, diced

1 cup peas (fresh or frozen)

1 cup corn (fresh or frozen)

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 cup beef or vegetable broth

2 tablespoons olive oil

For the mashed potato topping:

2 lbs potatoes, peeled and cubed

1/2 cup whole milk

4 tablespoons butter

Salt and pepper to taste

1/2 cup shredded cheddar cheese (optional)

Instructions
 

Prepare the Filling:

    - In a large skillet, heat olive oil over medium heat. Add chopped onions and cook until translucent, about 3-4 minutes.

      - Add minced garlic and diced carrots to the skillet. Sauté for another 5 minutes until the carrots are softened.

        - Increase the heat to medium-high and add the ground lamb (or beef). Cook until browned, breaking it up with a wooden spoon, about 5-7 minutes.

          - Stir in the tomato paste, Worcestershire sauce, thyme, and rosemary. Season with salt and pepper.

            - Pour in the beef or vegetable broth and bring to a simmer. Reduce heat and let it cook for about 10 minutes until slightly thickened.

              - Add the peas and corn, mixing well. Remove from heat and set aside.

                Make the Mashed Potatoes:

                  - While the filling is simmering, place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil.

                    - Cook for about 15-20 minutes or until the potatoes are fork-tender. Drain the potatoes and return them to the pot.
