4 medium potatoes, diced (Yukon Gold or red potatoes work well)

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon black pepper

½ teaspoon salt (adjust to taste)

2 tablespoons olive oil

1 cup chicken or vegetable broth

½ cup shredded cheddar cheese (optional)

Fresh parsley for garnish

Prepare the Ingredients: Start by washing the potatoes and dicing them into bite-sized cubes. Finely chop the onion, mince the garlic, and dice the bell pepper.

    Cook the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the Italian sausage, breaking it up with a wooden spoon. Cook until browned and fully cooked (about 5-7 minutes). Remove the sausage from the skillet and set aside, leaving the rendered fat.

      Sauté the Vegetables: In the same skillet, add the chopped onion and bell pepper. Sauté for about 3-4 minutes until they start to soften. Add the minced garlic and sauté for an additional minute, stirring frequently to prevent burning.

        Cook the Potatoes: Add the diced potatoes to the skillet along with the smoked paprika, thyme, black pepper, and salt. Stir well to combine all ingredients, ensuring the potatoes are coated with the seasoning.

          Add Broth and Simmer: Pour in the chicken or vegetable broth and return the cooked sausage to the skillet. Stir everything together and bring to a gentle boil. Reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the potatoes are tender, stirring occasionally.

            Add Cheese (Optional): If using cheese, sprinkle it on top of the skillet during the last few minutes of cooking. Cover the skillet again to help the cheese melt.
