Savory Pumpkin & Spinach Lasagna

3 cups fresh spinach, chopped

2 cups pumpkin puree (canned or roasted)

12 lasagna noodles (no-boil or regular)

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon nutmeg

1 cup vegetable broth

Salt and pepper to taste

Olive oil, for sautéing

Fresh parsley, for garnish (optional)

Instructions
 

Prepare the Filling:

    - In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

      - Once the onion is ready, stir in the chopped spinach and cook until wilted. Season with salt, pepper, oregano, basil, and nutmeg. Remove from heat and allow it to cool slightly.

        Mix the Pumpkin Layer:

          - In a bowl, combine the pumpkin puree, ricotta cheese, a pinch of salt, and pepper. Mix well until smooth and creamy.

            Assemble the Lasagna:

              - Preheat your oven to 375°F (190°C).

                - In a deep baking dish (9x13 inches), spread a thin layer of vegetable broth on the bottom to prevent sticking.

                  - Lay down 3 lasagna noodles side by side.

                    - Spread half of the pumpkin mixture over the noodles, followed by half of the sautéed spinach mixture. Sprinkle a third of the mozzarella cheese on top.

                      - Repeat the layers: noodles, pumpkin mixture, spinach mixture, and mozzarella. Finish with a final layer of noodles, then cover it with the remaining mozzarella and sprinkle with Parmesan cheese.

                        Bake:

                          - Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and continue to bake for an additional 15-20 minutes, or until the cheese on top is golden and bubbly.

                            Serve:

                              - Once cooked, let the lasagna rest for about 10 minutes before slicing. Garnish with fresh parsley if desired and serve warm.
