Savory Pork & Cabbage Stir Fry

1 lb (450g) pork tenderloin, thinly sliced

4 cups green cabbage, finely shredded

1 medium onion, thinly sliced

2 cloves garlic, minced

1-inch piece ginger, minced or grated

1 bell pepper (any color), sliced

2 carrots, julienned

3 green onions, chopped

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

Sesame seeds for garnish

Prep the Pork: In a large bowl, mix the sliced pork with 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, and a pinch of salt and pepper. Marinate for at least 15 minutes.

    Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

      Cook the Pork: Add the marinated pork to the pan in a single layer. Cook for about 3-4 minutes or until browned and cooked through, stirring occasionally. Remove from the pan and set aside.

        Sauté Vegetables: In the same pan, add the onions, garlic, and ginger. Sauté for about 2 minutes until fragrant. Add the bell pepper, carrots, and cabbage, stirring frequently for another 4-5 minutes, until the vegetables are tender but still crisp.

          Combine & Season: Return the cooked pork to the pan. Add the remaining soy sauce, oyster sauce, and sesame oil. If you desire some heat, sprinkle in the red pepper flakes. Mix everything together and stir-fry for an additional 2-3 minutes, allowing the flavors to meld.

            Finish & Serve: Toss in the green onions and give it a final stir. Taste and adjust seasoning if necessary. Serve hot, garnished with sesame seeds.
