Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup unsalted butter, chilled and cubed

1 cup shredded sharp cheddar cheese

1 cup diced cooked ham

3/4 cup buttermilk

1 tablespoon fresh chives, finely chopped (optional for garnish)

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper until well combined.

Cut in Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter, forks, or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.

Add Cheese and Ham: Gently fold in the shredded cheddar cheese and diced ham until evenly distributed throughout the flour mixture.

Mix Wet Ingredients: Create a well in the center of the mixture and pour in the buttermilk. Stir with a wooden spoon or spatula until just combined. The dough will be slightly sticky.

Shape the Biscuits: Turn the dough out onto a floured surface and gently knead it 2-3 times to bring it together. Pat it down into a rectangle about 1-inch thick. Fold it into thirds (like a letter), then roll it out again into a 1-inch thick layer. Repeat this folding and rolling process once more to create flaky layers.

Cut the Biscuits: Use a floured biscuit cutter to cut out the biscuits from the dough. Place them on the prepared baking sheet, making sure to leave some space between each biscuit.

Optional Garnish: For an added touch, sprinkle the tops of the biscuits with chopped chives before baking.

Bake: Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown and cooked through.

Cool and Serve: Remove from the oven and allow the biscuits to cool slightly on the baking sheet before transferring them to a wire rack. Serve warm with butter or on their own.
