Savory Breakfast Croissant Casserole

6 large croissants, preferably day-old, torn into bite-sized pieces

8 large eggs

1 cup whole milk

1 cup shredded cheddar cheese

1 cup diced cooked ham or cooked sausage

1 cup fresh spinach, chopped

½ cup diced bell pepper (any color)

½ cup diced onion

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper, to taste

2 tablespoons olive oil or melted butter (for greasing the baking dish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Baking Dish: Grease a 9x13-inch baking dish with the olive oil or melted butter.

      Tear Croissants: In a large bowl, place the torn pieces of croissant and set aside.

        Sauté Vegetables: In a skillet over medium heat, add a little olive oil and sauté the diced onion and bell pepper until they are softened, about 4-5 minutes. Stir in the chopped spinach and cook for another 1-2 minutes until wilted. Remove from heat and let cool slightly.

          Whisk the Eggs: In a medium bowl, whisk together the eggs, whole milk, garlic powder, oregano, salt, and pepper until well combined.

            Mix Ingredients: In the bowl with the torn croissants, add the sautéed vegetables, diced ham or sausage, and shredded cheddar cheese. Gently toss to combine.

              Combine with Egg Mixture: Pour the egg mixture over the croissant mixture. Using a spatula or a wooden spoon, fold everything together gently until the croissant pieces are nicely coated.

                Transfer to Baking Dish: Pour the entire mixture into the prepared baking dish, spreading it evenly. Press down slightly to ensure all croissant pieces are submerged in the egg mixture.

                  Bake: Place the casserole in the preheated oven and bake for 30-35 minutes or until the top is golden brown and the eggs are set. You can check the doneness by inserting a knife in the center—if it comes out clean, it’s ready!
