1 lb (450g) Italian sausage (mild or spicy, your choice)

4 medium potatoes, peeled and diced

1 small head of green cabbage, chopped

1 large onion, diced

3 cloves garlic, minced

4 cups low-sodium chicken broth

1 cup water

2 medium carrots, sliced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley or thyme for garnish (optional)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onions and cook until they become translucent, about 5 minutes.

    Add the minced garlic and cook for another minute, stirring frequently to avoid burning.

      Crumble the Italian sausage into the pot, breaking it apart with a spoon. Cook until browned and fully cooked, about 7-10 minutes.

        Incorporate the diced potatoes, sliced carrots, and chopped cabbage into the pot. Stir well to combine with the sausage and onions.

          Pour in the chicken broth and water. Add the dried thyme, smoked paprika, salt, and pepper. Bring the mixture to a boil.

            Once boiling, reduce the heat to low, cover the pot, and let the soup simmer for about 30-35 minutes, or until the potatoes and carrots are tender.

              Adjust the seasoning if needed, adding more salt and pepper to taste.

                Serve the soup hot, garnished with fresh parsley or thyme if desired.
