Sausage and Sweet Potatoes with Honey Garlic Sauce

1 lb (450g) Italian sausage (chicken, pork, or turkey)

2 medium sweet potatoes, peeled and diced

1 red bell pepper, sliced

1 yellow onion, sliced

3 tablespoons olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/4 cup honey

3 tablespoons soy sauce

2 cloves garlic, minced

1 tablespoon apple cider vinegar

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Vegetables: In a large bowl, combine the diced sweet potatoes, sliced bell pepper, and onion. Drizzle with 2 tablespoons of olive oil, and season with salt, pepper, garlic powder, and smoked paprika. Toss until everything is well coated.

      Roast the Vegetables: Spread the vegetable mixture in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25 minutes, or until the sweet potatoes are tender and slightly caramelized, stirring halfway through.

        Cook the Sausage: While the vegetables are roasting, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage (remove casings if using links) and cook until browned and no longer pink inside, about 7-10 minutes. Break the sausage into bite-sized pieces as it cooks.

          Make the Honey Garlic Sauce: In a small bowl, whisk together the honey, soy sauce, minced garlic, and apple cider vinegar until well combined.

            Combine and Glaze: Once the sausage is cooked, pour the honey garlic sauce over the sausage in the skillet. Stir to coat evenly and cook for an additional 2-3 minutes until heated through.

              Bring it Together: Once the vegetables are roasted, remove them from the oven and transfer to the skillet with the sausage. Gently toss everything together to combine and allow the flavors to meld for 1-2 minutes.

                Garnish and Serve: Remove from heat, garnish with chopped parsley, and serve hot alongside your favorite sides or over quinoa for a complete meal.
