1 cup cooked quinoa

1 cup chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 avocado, diced

1/2 cup shredded carrots

1/4 cup red onion, finely chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup fresh parsley, chopped

1/4 cup tahini

2 tablespoons lemon juice

1 tablespoon olive oil

1 teaspoon garlic powder

Prepare the Quinoa: In a medium saucepan, combine quinoa and 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let cool.

    Combine Base Ingredients: In a large mixing bowl, add the cooked quinoa, chickpeas, cherry tomatoes, cucumber, avocado, shredded carrots, red onion, and parsley. Gently toss to combine.

      Make the Dressing: In a small bowl, whisk together tahini, lemon juice, olive oil, garlic powder, salt, and pepper. If the dressing is too thick, thicken it with a little more olive oil or water until you reach your desired consistency.
