2 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 cup corn (canned or frozen)

1 red bell pepper, diced

1 small red onion, diced

1 can black beans, drained and rinsed

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon garlic powder

1 tablespoon olive oil

Salt and pepper to taste

1 cup shredded Monterey Jack cheese

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Aluminum foil

Instructions
 

Preheat the Oven or Grill: Preheat your oven to 400°F (200°C) or prepare a grill for direct cooking.

    Prepare the Chicken: In a medium bowl, coat the chicken breasts with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper. Ensure they are evenly coated.

      Prepare the Foil Packets: Lay out four large pieces of aluminum foil (about 12x12 inches each). Divide the halved cherry tomatoes, corn, diced bell pepper, diced onion, and black beans evenly among the foil pieces, creating a bed for the chicken.

        Layer the Chicken: Place one seasoned chicken breast on top of each portion of vegetables and beans.

          Seal the Packets: Carefully fold the sides of the foil over the chicken and vegetables, sealing each packet tightly to prevent any steam from escaping.

            Cooking: Place the foil packets on a baking sheet if using an oven, or directly on the grill. Cook for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

              Add Cheese: Carefully open the foil packets (watch for steam) and sprinkle shredded Monterey Jack cheese on top of the chicken. Close the packets again and allow the cheese to melt for about 5 minutes.

                Serve: Remove the packets from the oven or grill and let them sit for a couple of minutes. Open each packet and garnish with fresh chopped cilantro. Serve with lime wedges on the side for added zest.
