3/4 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon sea salt

1 cup butterscotch chips

Flaky sea salt, for sprinkling on top

Preheat Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together on medium speed until light and fluffy (about 2-3 minutes).

      Add Eggs and Vanilla: Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract until fully incorporated.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and 1/2 teaspoon of sea salt.

          Mix Dry Ingredients with Wet: Gradually add the dry ingredients to the wet mixture, mixing at a low speed until just combined. Be careful not to overmix the dough.

            Fold in Butterscotch Chips: Gently fold in the butterscotch chips until evenly distributed throughout the dough.

              Scoop Dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spaced 2 inches apart.

                Sprinkle with Sea Salt: Before baking, sprinkle a little flaky sea salt on top of each cookie dough ball. This will enhance the flavor and provide a lovely contrast.
