8 oz (about 225g) fettuccine or your pasta of choice

2 salmon fillets (6 oz each), skinless and boneless

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

Zest of 1 lemon

Juice of 1/2 lemon

1/2 cup grated Parmesan cheese

1 cup fresh spinach (optional)

Fresh parsley, chopped for garnish

Red pepper flakes (optional, for heat)

Instructions
 

Cook the Pasta: Begin by boiling a large pot of salted water. Once it reaches a rolling boil, add the fettuccine and cook according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Prepare the Salmon: While the pasta cooks, season both sides of the salmon fillets generously with salt and pepper.

      Cook the Salmon: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, gently place the salmon fillets in the skillet. Cook for about 4-5 minutes on each side until the salmon is cooked through and flakes easily with a fork. Remove from the pan and set aside. Once slightly cooled, flake the salmon into bite-sized pieces.

        Make the Sauce: In the same skillet (discard excess oil if needed, but keep the brown bits for flavor), add the minced garlic and cook for about 1 minute, or until fragrant. Be cautious not to burn the garlic.

          Incorporate Cream: Add the heavy cream, lemon zest, and lemon juice to the skillet. Stir to combine and let it simmer for about 3-4 minutes until the sauce thickens slightly.

            Add Cheese and Spinach: Reduce the heat to low, and stir in the grated Parmesan cheese until melted and smooth. If using, add in the fresh spinach and stir until wilted.

              Combine Pasta and Salmon: Toss the cooked fettuccine into the sauce, and if needed, add some reserved pasta water to loosen the sauce. Fold in the flaked salmon gently to combine all ingredients, ensuring the salmon warms through.

                Serve: Plate the pasta and sauce, and garnish with freshly chopped parsley and a sprinkle of red pepper flakes if desired for a kick. Serve immediately and enjoy!
