Salmon Lettuce Wraps with Watermelon Glaze

Ingredients
  

For the Salmon:

2 fillets of fresh salmon (about 6 oz each)

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

For the Watermelon Glaze:

1 cup watermelon juice (freshly blended and strained)

2 tablespoons honey

1 tablespoon soy sauce

1 teaspoon fresh ginger, grated

1 tablespoon rice vinegar

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

For the Wraps:

1 head of butter lettuce (or iceberg lettuce), leaves separated

1 small cucumber, thinly sliced

1 avocado, sliced

1 red bell pepper, julienned

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Salmon:

    - Preheat the grill or a skillet over medium-high heat.

      - Rub the salmon fillets with olive oil, salt, pepper, garlic powder, and smoked paprika. Set aside.

        Make the Watermelon Glaze:

          - In a saucepan over medium heat, combine the watermelon juice, honey, soy sauce, ginger, and rice vinegar. Bring to a simmer.

            - Once simmering, stir in the cornstarch mixture and cook for an additional 2-3 minutes or until the glaze thickens slightly. Remove from heat and set aside.

              Cook the Salmon:

                - Grill or sear the salmon fillets for about 4-5 minutes per side, or until cooked through and flakes easily with a fork. During the last minute of cooking, brush the watermelon glaze over the top of the salmon.

                  Assemble the Wraps:

                    - Take a lettuce leaf and layer it with cucumber slices, avocado, and red bell pepper.

                      - Carefully place a piece of salmon on top and drizzle more of the watermelon glaze over the salmon.

                        Garnish and Serve:

                          - Top with fresh cilantro and serve with lime wedges on the side for an extra zing.
