2 cups cooked chicken, shredded (preferably rotisserie for convenience)

1 cup chicken broth

1 cup whole milk

3 cloves garlic, minced

1 medium onion, diced

2 cups mixed vegetables (carrots, peas, green beans)

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

Salt and pepper to taste

2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

6 tablespoons unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

¾ cup buttermilk

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent, about 3-4 minutes.

      Cook Chicken Mixture: Add the shredded chicken and mixed vegetables to the skillet. Pour in the chicken broth and whole milk. Stir in thyme, rosemary, paprika, salt, and pepper. Let it simmer for about 5 minutes until slightly thickened. Transfer the mixture to a greased 9x13 inch baking dish.

        Make the Biscuit Topping: In a separate mixing bowl, combine flour, baking powder, baking soda, and ½ teaspoon salt. Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs. Stir in shredded cheddar cheese.

          Combine Wet Ingredients: Pour buttermilk into the flour mixture and gently stir until just combined; do not overmix.

            Assemble the Cobbler: Spoon dollops of the biscuit mixture over the chicken and vegetable mixture in the baking dish, leaving some gaps for steam to escape.

              Bake: Place the cobbler in the preheated oven and bake for 25-30 minutes, or until the biscuit topping is golden brown and a toothpick inserted into the biscuit part comes out clean.
