Rosemary Sea Salt Soft Pretzels

Ingredients
  

1 ½ cups warm water (110°F to 115°F)

1 packet (2 ¼ tsp) active dry yeast

1 tablespoon granulated sugar

4 cups all-purpose flour

2 teaspoons fine sea salt

2 tablespoons fresh rosemary, finely chopped

½ cup baking soda (for boiling)

1 egg, beaten (for egg wash)

Coarse sea salt, for sprinkling on top

2 tablespoons melted butter (for brushing)

Instructions
 

In a large mixing bowl, combine warm water, yeast, and granulated sugar. Let it sit for about 5-7 minutes, or until it becomes frothy.

    Gradually add the flour, fine sea salt, and chopped rosemary to the yeast mixture. Stir with a wooden spoon until a dough begins to form.

      Transfer the dough to a floured surface and knead for about 5-7 minutes, until the dough is smooth and elastic. If the dough is too sticky, add a little more flour, but be careful not to add too much.

        Place the kneaded dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.

          Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

            Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope, about 20 inches long, and twist into the traditional pretzel shape.

              In a large pot, bring 10 cups of water to a boil and add the baking soda. Carefully add each pretzel into the boiling water (you can do 1-2 at a time). Boil for about 30 seconds on each side for a chewy texture. Remove with a slotted spoon and place them on the prepared baking sheet.

                Brush the tops of each pretzel with beaten egg, then sprinkle with coarse sea salt.

                  Bake in the preheated oven for 12-15 minutes or until they are golden brown.

                    Once baked, immediately brush the warm pretzels with melted butter for extra flavor, and enjoy!
