1.5 lbs sirloin steak, cut into 1-inch cubes

3 tablespoons olive oil

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons soy sauce

1 tablespoon balsamic vinegar

1 tablespoon Dijon mustard

1 teaspoon black pepper

1 teaspoon salt

1 large red bell pepper, cut into 1-inch pieces

1 large red onion, cut into wedges

1 zucchini, sliced into thick rounds

8 skewers (soaked in water for 30 minutes if wooden)

Instructions
 

Marinate the Steak: In a large mixing bowl, combine olive oil, minced garlic, chopped rosemary, soy sauce, balsamic vinegar, Dijon mustard, black pepper, and salt. Stir well to create a marinade.

    Add the Steak: Add the cubed sirloin steak to the marinade and mix until all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour or up to overnight for deeper flavor.

      Prepare the Vegetables: While the steak marinates, prepare the vegetables. Cut the bell pepper, red onion, and zucchini into 1-inch pieces.

        Assemble the Kebabs: Preheat your grill to medium-high heat. Thread the marinated steak onto the skewers, alternating with pieces of bell pepper, onion, and zucchini until all ingredients are used.

          Grill the Kebabs: Place the skewers on the preheated grill. Cook for about 8-10 minutes, turning every few minutes, until the steak reaches your desired doneness (medium-rare is about 135°F).

            Rest and Serve: Once cooked, remove the kebabs from the grill and let them rest for 5 minutes. Serve hot with your choice of sides like rice, salad, or grilled bread.
