Roasted Tomato and White Bean Toast

2 cups cherry tomatoes, halved

1 can (15 oz) white beans (cannellini or great northern), drained and rinsed

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon balsamic vinegar

Salt and pepper to taste

1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

1 teaspoon fresh basil, chopped (plus more for garnish)

4 slices of crusty bread (like sourdough or ciabatta)

1 tablespoon lemon juice

Optional: Crushed red pepper flakes for heat

Optional: Grated Parmesan cheese for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Tomatoes: In a bowl, toss the halved cherry tomatoes with 1 tablespoon of olive oil, minced garlic, balsamic vinegar, salt, pepper, and thyme. Spread the tomatoes on a baking sheet, cut side up.

      Roast Tomatoes: Place the baking sheet in the preheated oven and roast the tomatoes for about 20-25 minutes, or until they are blistered and caramelized, stirring halfway through.

        Prepare White Bean Mixture: In a mixing bowl, combine the drained white beans, remaining tablespoon of olive oil, lemon juice, chopped basil, salt, pepper, and optional crushed red pepper flakes. Mash lightly with a fork until the mixture is slightly chunky but combined.

          Toast Bread: While the tomatoes are roasting, toast the slices of bread until golden brown. You can do this in a toaster, or for extra flavor, brush the bread with olive oil and toast it in a skillet or on a grill.

            Assemble Toasts: Once the tomatoes are nicely roasted, remove them from the oven. Spread a generous layer of the white bean mixture over each slice of toasted bread.

              Top with Tomatoes: Spoon the roasted tomatoes over the white bean spread, ensuring to include some of the juices for added flavor.
