Ingredients

1 baguette, sliced into 1/2-inch thick pieces

8 fresh figs, halved

4 oz goat cheese, softened

2 tbsp honey

2 tbsp olive oil

1 tbsp balsamic glaze

1/4 cup chopped fresh rosemary or thyme

Salt and pepper to taste

Optional: crushed red pepper flakes for heat

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Baguette: Arrange the sliced baguette pieces on a baking sheet. Drizzle them lightly with olive oil, then sprinkle with a pinch of salt. Bake in the preheated oven for about 10 minutes, or until the bread is golden and crispy.

Roast the Figs: On a separate baking sheet, place the halved figs cut-side up. Drizzle with olive oil and honey, then sprinkle with salt. Roast in the oven alongside the crostini for about 15-20 minutes, until the figs are tender and caramelized.

Prepare the Goat Cheese Spread: In a small bowl, mix the softened goat cheese with fresh herbs (rosemary or thyme), and a little salt and pepper to taste. If you'd like, add a pinch of crushed red pepper flakes for a touch of heat.

Assemble the Crostini: Once the crostini and figs are out of the oven, let them cool slightly. Spread a generous amount of the herbed goat cheese on each crostini. Top each with a roasted fig half.

Finish with Balsamic Glaze: Drizzle a bit of balsamic glaze over the assembled crostini for a pop of flavor and aesthetic appeal.

Serve: Arrange the crostini on a serving platter, garnish with a few extra herbs if desired, and enjoy warm or at room temperature!
