_For the Lamb:_

1 leg of lamb (about 4-5 lbs)

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

2 tablespoons olive oil

1 teaspoon salt

1 teaspoon black pepper

Zest of 1 lemon

_For the Mint Sauce:_

1 cup fresh mint, chopped

1 tablespoon white vinegar

1 tablespoon sugar

1/2 cup boiling water

Salt to taste

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare the Lamb:

      - In a small bowl, mix the minced garlic, rosemary, thyme, olive oil, salt, pepper, and lemon zest to create a herb paste.

        - Rub the herb mixture all over the leg of lamb, making sure to cover it thoroughly.

          Roast the Lamb:

            - Place the leg of lamb in a roasting pan and insert it into the preheated oven.

              - Roast for about 1 hour and 15 minutes for medium-rare, or until a meat thermometer reads 135°F (57°C). Adjust cooking time for your preferred doneness.

                Make the Mint Sauce:

                  - While the lamb is roasting, prepare the mint sauce. In a bowl, combine the chopped mint, vinegar, and sugar.

                    - Pour the boiling water over the mixture and stir until the sugar dissolves. Add salt to taste and let it sit to infuse.

                      Rest the Lamb:

                        - Once the lamb reaches your desired doneness, remove it from the oven and cover it loosely with aluminum foil. Let it rest for 15-20 minutes.

                          Slice and Serve:

                            - After resting, carve the lamb into slices and serve with the mint sauce drizzled on top or on the side. Accompany with roasted vegetables or a fresh salad.
