Ingredients

4 cups fresh rhubarb, chopped into 1-inch pieces

1 cup granulated sugar

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 cup rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 cup unsalted butter, melted

1/4 teaspoon salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Rhubarb Filling: In a large mixing bowl, combine the chopped rhubarb, granulated sugar, cornstarch, vanilla extract, and cinnamon. Toss well to coat the rhubarb evenly. Pour the mixture into a greased 9x13-inch baking dish, spreading it out evenly.

Make the Crisp Topping: In a separate bowl, mix the rolled oats, all-purpose flour, brown sugar, and salt. Pour in the melted butter and stir until the mixture is crumbly and well combined.

Assemble the Crisp: Evenly sprinkle the oat topping over the rhubarb filling in the baking dish, covering it completely.

Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes or until the topping is golden brown and the rhubarb is bubbling.

Cool and Serve: Remove from the oven and let it cool for about 10 minutes before serving. This will allow the juices to thicken slightly. Serve warm, optionally topped with vanilla ice cream or whipped cream for an extra treat!
