Red Velvet Brownies

1 cup unsalted butter, melted

1 ¾ cups granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 tablespoon red food coloring

1 ¼ cups all-purpose flour

1/2 cup cocoa powder

1 teaspoon baking powder

1/2 teaspoon salt

1 cup white chocolate chips (or chopped white chocolate)

1/2 cup cream cheese, softened (for frosting)

1 cup powdered sugar (for frosting)

1 tablespoon milk (for frosting)

Optional: 1 teaspoon vanilla extract (for frosting)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and line a 9x13-inch baking pan with parchment paper, leaving a bit of an overhang for easy removal.

    In a large bowl, whisk together the melted butter and granulated sugar until well combined.

      Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract and red food coloring until the mixture is smooth and evenly colored.

        In another bowl, sift together the all-purpose flour, cocoa powder, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.

          Gently fold in the white chocolate chips until evenly distributed throughout the batter.

            Pour the brownie batter into the prepared baking pan, spreading it evenly.

              Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (but not wet batter).

                While the brownies are baking, prepare the cream cheese frosting. In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and beat until well combined. Mix in the milk and vanilla extract until the frosting is fluffy and spreadable.

                  Once the brownies are done baking, remove them from the oven and let them cool in the pan for about 10-15 minutes. Use the parchment overhang to lift them out of the pan and onto a wire rack to cool completely.

                    Once cool, spread the cream cheese frosting evenly over the top of the brownies.

                      Cut into squares and serve, enjoying the rich and delightful flavors of your red velvet brownies!
