1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

16 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

1 cup sour cream

1 cup fresh raspberries (or thawed frozen raspberries)

2 tbsp cornstarch

Optional: 2 tbsp powdered sugar for garnish

Preheat the Oven: Preheat your oven to 325°F (160°C). Line a 9x13 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and ¼ cup granulated sugar. Mix until well combined and the mixture resembles wet sand. Press this mixture firmly into the bottom of the prepared baking pan to form an even layer. Bake for 10 minutes, then remove from the oven and let it cool slightly.

      Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in 1 cup of granulated sugar and mix until well blended. Add the vanilla extract and beat until incorporated.
